Serves 4

What you need:
1 large onion, finely chopped
1-2 garlic cloves, crushed
olive oil
1 tbsp ground cumin
400g can chopped tomatoes
200g can kidney beans, rinsed and drained
200g can cannellini beans, rinsed and drained
100g/4oz green beans, chopped
100g/4oz spinach, washed and roughly chopped

How to prepare:

Cook the onion and garlic in a little olive oil until softened.
Add the cumin and cook for 1 min.
Tip in the tomatoes with a cup of water and simmer for 10 mins, until thickened.
Add all the beans and cook for 5 mins, then add the spinach and cook for 5 mins more.
Serve with crusty brown bread.
